Jo’s Scones

I love scones and have tried several scones recipe but I found this the best so far. The origin of the recipe was from Anna Olson but have done some improvements to it.

SCONES

INGREDIENTS – DRY
3 cups Self Raising Flour
1/4 cups Sugar
1/2 tsp Salt
3/4 cups (6oz) unsalted butter – cubed (I use SCS but if it is salted I will omit the salt)

INGREDIENTS – WET
1 cup Milk | Buttermilk
1 tsp Vanilla essence
1/2 cup Raisins (pre-soaked in hot water to soften then drain dry)

METHOD
1 Mix all the DRY ingredients into a large bowl
2 Rub butter to bits.
3 When all flour is covered and look like crumble, add all the WET ingredients
4 Using a fork, mix until it becomes a wet dough.
5 Dust your work table with flour and pour out the dough. Press & fold (3 to 4 times only) flouring as you go along.
6 Dust with flour & press down dough into 1.5″ thick
7 Cut into Circle or triangles and place them onto baking sheet.
8 Brush with egg wash or leftover buttermilk.
9 Bake: 190° C – 20 minutes
