Much like the egg drop soup, omlette chicken soup is perfect for days when you wanna whip a nice hot soup in minutes and have a bit more bite.
1 tsp soya sauce
2 dashes of white pepper
20 gms salted preserved veg (optional)
80 gms Tung Fun (soaked till soft)
1L chicken stock
1. Whisky 4 eggs with soya sauce, pepper and preserved veg till fluffy.
2. Fry omlette till golden brown and break them up
3. Pour chicken stock and add tung fun. Boil for 2 minutes.
4. Serve hot with garnishes like fried onions or spring onions.
