Preserved Vegetables with pork (Mui Choy)

INGREDIENTS
250gmsPreserved vegetable – sweet
250gmsPreserved vegetable – salty
250gm Pork belly (pun fei sau) – remove skin
3 pcs red onion
1tbs Dark soya
2 tsp Soya sauce

METHOD – Cleaning the preserved vegetables

1. Wash preserved vegetables thoroughly to remove salt/sugar.
2. Boil vegetables for at least 10 mins. Remove and wash it thoroughly.
3. Cut veg into fine slices 1cm

METHOD

1. Cut pork belly into cubes. 
2. Place pork into a pot of room temperature wash and bring it to boil. This is to remove all scums.
3. Remove pork and set aside to drain.
4. In a pot, fry onion then add pork and fry for a minute.
5. Add soy sauce and fry pork till fragrant.
6. Add in cut veg and add water till it covers the veg.
7. Boil it for 8 to 10 minutes (medium heat)
8. Add dark soya sauce and boil for at least 1 hour until meat tender and veg is soft.
9. Serve hot!
