Pasta Carbonara

Pasta Carbonara
Cooking Time : 20 mins
Serve : 2 to 3 pax

Ingredients

200 gms  Pasta (I use penne, you can use spaghetti)
1/2           yellow onion (finely chopped)
2              egg Yolks
50 gms   button mushroom (optional - bite size)
100 gms bacon rashes (bite size)
200 ml   Cream
40 gms  Parmesan Cheese (grated)
Salt & pepper to taste

Method

1. Boil pasta in heavily salted water for about 7 to 8 mins (refer to   
     packet).
2. Fry bacon until golden brown.
3. Add onion and fry still soft.
4. When pasta is done, drain pasta but keep 1 cup of pasta water.
5. Add pasta in pan.
6. In a separate bowl, beat egg yolks and cream together.
7. Add grated parmesan and beat until well combined.

8. Make sure pan is at low heat. Add cream mixture into pan and stir 
    continuously.
9. Remove pan from heat. If sticky, add in reserved pasta water and mix 
    well.
10. Add pepper but taste pasta if it is salty. If not, add salt.
11. Serve hot with a little grated cheese on top.
